Christmas Fruit Cupcake
Ingredients:
200g Crystallized fruits 80ml Brandy
300g Plain Flour 150g soft brown sugar
2 tsp Baking powder 1 tsp salt
1 tsp allspice 1 tsp ground cinnamon
½ tsp ground Ginger ½ tsp grated nutmeg
120ml milk 1 egg,slightly beaten
2 tbsp apricot jam 1 tsp finely grated orange rind
1 tsp finely grated lemond rind
125g unsalted butter,melted and cooled
White Fondant Glaze
150g Icing Sugar
1tsp finely grated lemond rind
1 tsp lemon juice
Method:
1. In a bowl, mix fruits and brandy and let stand for about 2 hrs, stirring from time to time.
2. Preheat oven 180̊ C.
3. In a large bowl, mix flour, sugar, baking powder,salt and spices together and set aside.
4. Lightly beat the milk with the egg,apricot jam,orange and lemon rinds and melted butter. Add to flour mixture and mix well. Stir in fruits and brandy.
5. Spoon batter into cupcake papers,filling about 2/3 full and cook for 20-30 min,until tester came out clean.Remove from oven and cool.
6. To make glazing:mix icing sugar and lemon rind together and gradually add lemon juice until you obtain a smmoth paste, easy to spread.You may not need all of the lemon juice.Glaze and decorate cupcakes to your taste.
